Chicken & Grain Power Bowl

Quick and healthy one-pot chicken meal with ancient grains, broccoli, and balanced nutrition. High in fiber, protein, and perfect for weeknights!

Ingredients
  

  • 1 tbsp Avocado oil
  • 10 oz Boneless, skinless chicken breast, chopped into 1/2 inch pieces
  • 4 cups Fresh broccoli florets
  • 2 pouches Seeds of Change, Organic Quinoa, Brown Rice with Garlic Blend
  • 1 cup Low sodium chicken broth

Method
 

  1. Sauté the diced chicken breast chunks in the avocado for 2-3 minutes on each side.
  2. Steam broccoli and add to chicken in the electric grill pan. You can microwave the broccoli to steam or steam next to the chicken by covering the grill pan.
  3. Microwave Seeds of Change pouches. Add to chicken and broccoli in pan.
  4. Add chicken broth, stir and simmer. Best served in a bowl.

Notes

Here I used Primal Kitchen avocado oil and Pacific Foods low sodium chicken broth.
I prepared in an electric grill pan but other larger raised cooking pans can be used in place of this.
It's possible to divide into 3-4 servings. Three servings would yield about 520 calories per serving, while 4 servings would be 390 calories per serving.
