Coconut Maple Crunch Date Bites

Ingredients
  

  • 20-25 dates, cut in halves
  • 1/2 cup oat bran
  • 1 cup almonds, sliced
  • 3 tbsp chia seeds
  • 1/2 cup white chocolate chips
  • 1/3 cup peanut butter
  • 1 tsp vanilla bean paste
  • 2 tbsp maple syrup
  • 1/2 tsp salt
  • 3 tbsp water
  • 2/3 cup shredded, dried coconut

Method
 

  1. Add all ingredients except for coconut into a food processor using the "S" blade.
  2. Pulse until mixture is blended. You may need to pulse and then pause and spread out mixture more evenly to the food processor and then pulse again. It does not need to be completely pureed as you want to avoid a paste.
  3. Transfer mixture with a spatula into a medium bowl.
  4. On a cookie sheet with parchment paper, roll the mixture into small sized balls and then roll in dried coconut.
  5. Once all date bites are completed chill in the refrigerator for ~1 hour or more.

For a festive look, roll the date bites into small, medium and large sizes. Assemble using an appetizer pick to make a snowman for a holiday snack or party tray.
