- Whisk all ingredients in shallow dish
- Lightly coat each slice of bread with custard mixture
- Heat in a skillet pan for about 2-3 minutes each side on low heat or until golden brown
- Serve with the pumpkin ricotta topping and a sprinkle of roasted pumpkin seeds

Recipe makes 8-10 slices
Heavily coating the bread can make it a little soggy and less firm when cooking. Bread that is a few days old will absorb the custard best.
