Ingredients
Method
- Add all ingredients except for coconut into a food processor using the "S" blade.
- Pulse until mixture is blended. You may need to pulse and then pause and spread out mixture more evenly to the food processor and then pulse again. It does not need to be completely pureed as you want to avoid a paste.
- Transfer mixture with a spatula into a medium bowl.
- On a cookie sheet with parchment paper, roll the mixture into small sized balls and then roll in dried coconut.
- Once all date bites are completed chill in the refrigerator for ~1 hour or more.
Notes
For festive variation, stack small, medium and large date bites to make a winter snowman using an appetizer pick. Use in a fun holiday board display like this one below that I featured on Fox13 The Place! Watch the full segment here to see how I shared to put them together!
