Lean & Green Spinach Turkey Lasagna

When it comes to enjoying Italian favorites, like turkey lasagna, swaps can be key to enjoying in a heart-healthy way. Swapping in lean proteins like ground turkey or chicken and adding fiber from extra veggies, like spinach, can help make a big difference with nutrition without compromising flavor. In this recipe, I focused on reducing fat by using lean turkey and low-fat cheeses, while still keeping the rich flavors and texture you love. With just six lasagna noodles for the entire dish, it's lower in carbs but not completely eliminated so you actually enjoy without substantial changes.

Ingredients
  

  • 2 tablespoon Extra Virgin Olive Oil
  • ¾ lb 85/15 Ground Turkey Meat
  • 1 pinch salt and pepper
  • 2 bunches Spinach
  • 1.5 cups Low Fat Ricotta Cheese
  • 2.25 cups Shredded Fat Free Mozzarella Cheese
  • ⅓ cup Grated Parmesan Reggiano Cheese
  • 24 oz Marinara Sauce
  • 6 pieces Barilla Oven-Ready Lasagna Noodles

  • 8x11 Baking Dish

Method
 

  1. In a skillet, add extra virgin olive oil and brown ground turkey meat with a small seasoning of salt and pepper. Set aside when done.
  2. Add spinach to skillet pan until slightly wilted. Place in dish lined with a paper towel to absorb excess water.
  3. In a large bowl, mix 1.5 cups of ricotta cheese with 1.5 cups mozzarella and all grated parmesan reggiano cheese. Add and mix in spinach.
  4. In the baking dish, add 1 cup of marinara sauce, followed by 3 lasagna noodles. You may need to break the noodle in half for this pan size.
  5. Add layer of marinara sauce, then cheese mixture, followed by a layer of the ground turkey meat and then ¼ cup remaining mozzarella.
  6. Add 3 more lasagna noodles and repeat prior layering step.
  7. Cover with foil and bake at 375°F for 25 minutes. Remove foil and bake additional 5 minutes.
