White Peach Kale Caesar Salad

This fresh white peach Caesar salad combines juicy peaches, tender kale, crisp romaine, Parmesan, and creamy Caesar dressing for a summer twist.

Ingredients Method Notes

Ingredients
  

  • 4 cups kale, chopped, stems removed
  • 3 cups romaine lettuce, chopped
  • ½ cup kale microgreens mix
  • 1 cup white peaches, diced
  • ¼ cup Parmesan cheese, shaved
  • ½ lemon lemon juice, squeezed
  • 1 teaspoon extra virgin olive oil
  • 2 tablespoon Caesar dressing, homemade or store brand

Method
 

  1. Wash and thoroughly dry the kale and romaine.
  2. If preferred, use a small knife to slice down the center of each kale stem to removed and then chop kale.
  3. Add the kale to a large bowl and massage EVOO with clean hands for about 1-2 minutes until it becomes softer and darker in color.
  4. Chop the romaine and add it to the bowl. Add kale microgreens to the bowl.
  5. Squeeze lemon juice from ½ of a lemon over the mixed greens.
  6. Dice the white peaches and add them to the greens.
  7. Add Caesar dressing and toss until the greens are evenly coated.
  8. Top with Parmesan and your favorite crunchy toppings.
  9. Finish with freshly cracked black pepper and serve immediately.

Storage

For the best texture, I recommend storing the salad components separately whenever possible.

Keep the greens, sliced peaches, dressing, Parmesan, and crunchy toppings in separate containers and assemble just before serving.

If the salad has already been dressed, store it covered in the refrigerator and enjoy it within a day. Keep in mind that the greens and toppings will soften as they sit in the dressing.

Top Tips

Don't Skip the Kale Massage!

If you're new to massaging kale, don't worry, it sounds much more complicated than it is!

After removing the tough stems, add your chopped kale to a large bowl and use your clean hands to gently squeeze, rub, and massage the leaves for about 1-2 minutes.

You'll notice the kale becomes softer, darker, and more tender as you massage it. This helps break down some of the tough structure of the raw kale, making it much more pleasant to eat.

It also helps the kale better absorb the Caesar dressing, so you get flavorful, tender greens instead of a tough or overly chewy bite.

My tip: Massage the kale before adding the romaine. The romaine stays crisp, while the kale gets the tender texture you want.

Choose the Right Peach

Look for white peaches that have a fragrant peach aroma and give slightly when gently pressed. Avoid peaches that are rock-hard or have significant bruising.

If your peaches aren't quite ripe yet, let them sit at room temperature for a day or two before using them.

FAQ

What's the difference between white peaches and yellow peaches?

The biggest differences are flavor, acidity, and color. White peaches tend to be sweeter, more delicate, and less acidic, while yellow peaches have a more classic peach flavor with a slightly tangier bite.

Can I use yellow peaches instead?

Absolutely! Yellow peaches work beautifully in this salad. White peaches simply offer a sweeter, more delicate flavor that pairs particularly well with the savory Caesar dressing.

Can I use all kale instead of kale and romaine?

Yes! You can make this salad with all kale if you prefer. Just be sure to massage the kale well before adding the dressing. Romaine lettuce is used to pair the traditional Caesar lettuce along with kale in case a softer blend is preferred versus a heartier salad base.
