Few things feel as indulgent as perfect, traditional and authentic Belgian waffles fresh off the iron. The golden exterior, the soft fluffy interior, and the deep pockets ready to catch fruit, cream, or syrup make them a brunch favorite for good reason.

Why traditional? Growing up, my family always had a Sunday breakfast and my dad was famous for making delicious Belgian waffles each week that it became our family tradition I have continued with my kids and extended family on the weekends and holidays. My mother-in-law even requests, "Waffle Sunday" when she visits.

Why authentic? However, I wanted an improved recipe with more nutrients without losing the quality taste and texture of the original. The challenge with many "healthy" waffle recipes is that they often compromise what makes waffles so satisfying in the first place. Too many substitutions and removal of ingredients can leave them dense, rubbery, or lacking flavor.

This recipe keeps the traditional Belgian waffle texture and flavor while adding a modest nutrition boost for added authenticity. Greek yogurt adds protein, fiber, and richness while maintaining the light interior and crisp exterior that make Belgian waffles special. The butter stays as part of the formula but just a little less.

The result is a waffle that tastes like something you might order at a high-end brunch spot. Expect crispy golden edges, a soft center, and rich flavor that feels special enough for a weekend brunch.

Each waffle contains about 7 grams of protein, making them satisfying while still feeling like a treat.

Ingredients Method Notes

Ingredients
  

  • 1.5 cup white flour
  • 2 tablespoon ground flaxseed meal
  • 2 teaspoon baking power
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 5 tablespoon butter, unsalted, melted
  • 1 cup Greek yogurt, nonfat
  • ¾ cup nonfat milk
  • 1 teaspoon maple syrup
  • 1 teaspoon vanilla extract

Method
 

  1. Add and whisk dry ingredients: flour, ground flaxseed meal, baking powder, baking soda and salt.
  2. Mix wet ingredients: melted butter, Greek yogurt, nonfat milk, maple syrup and vanilla extract.
  3. Add the dry ingredients to the wet ingredients and stir gently until combined.
  4. Pour batter into waffle iron and cook until golden brown.
