Red Velvet Belgian Waffles

Celebrate the weekend with a decadent twist on this classic breakfast! These Red Velvet Belgian Waffles combine rich, cocoa flavor in a light, fluffy texture. Cottage cheese provides a 14g protein boost of in a serving of two waffles. Red Velvet Belgian Waffles

Indulge in these decadent Red Velvet Belgian Waffles with rich cocoa flavor and a light, fluffy texture, plus a good source of protein from cottage cheese. Top with maple syrup, strawberries, or whipped cream, and use a heart-shaped cutter for a festive touch!

Ingredients Method Notes

Ingredients
  

  • 1.5 cups flour
  • 1 teaspoon baking powder
  • 2 tablespoon cocoa powder, unsweetened
  • 1 cup cottage cheese, 2%
  • 3 large eggs
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon vanilla bean paste
  • 2 tablespoon avocado oil
  • ½ cup whole milk
  • 2 teaspoon red food coloring

Method
 

  1. Mix flour, baking powder and cocoa powder in a large bowl.
  2. Add cottage cheese, maple, syrup, vanilla extract, vanilla bean paste, eggs, avocado oil, milk and food coloring in blender or mini food processor. Blend wet ingredients.
  3. Combine wet and dry ingredients. Mix with whisk.
  4. Pour mixture into waffle iron and cook until fully baked. Time will depend on the waffle iron. Mini waffle iron tends to cook faster within 1-2 minutes per waffle.
  5. Add your favorite topping! Use a heart-shaped cookie cutter for a festive shape.

Mini waffle maker will make 10 waffles. Larger waffle iron will make 6.

For larger gatherings, this four section waffle maker has slightly larger red velvet Belgian waffles portions and a lot of bells and whistle. More pricey but saves time when there are more people joining for breakfast or brunch. The single serve waffle iron provides a smaller portion, great for individuals, lower price and storage space and quicker clean up.
