Ingredients Method Notes

Ingredients
  

  • 2 eggs
  • ⅔ cup non-fat milk
  • ½ cup pumpkin puree
  • 4 tablespoon part skim ricotta
  • 2 teaspoon maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice
  • ½ tsp cinnamon
  • 8 slices wheat bread

Method
 

  1. Whisk all ingredients in shallow dish
  2. Lightly coat each slice of bread with custard mixture
  3. Heat in a skillet pan for about 2-3 minutes each side on low heat or until golden brown
  4. Serve with the pumpkin ricotta topping and a sprinkle of roasted pumpkin seeds

French toast: 2 slices, 410 calories, 49 carbs, 7g sugar, 5g fiber, 22g protein, 12g fat
Recipe makes 8-10 slices
Heavily coating the bread can make it a little soggy and less firm when cooking. Bread that is a few days old will absorb the custard best.
