Ingredients
  

  • 1 cup Butternut Squash, diced
  • 1/4 cup Carrots, shredded
  • 1 tsp Ginger root, minced
  • 1/2 tsp Garlic, minced
  • 1 tsp Olive oil
  • 1 tbsp Honey
  • 2 tbsp Apple Cider Vinegar
  • 1.5 cups Chicken Bone Broth
  • 1 tbsp Lemon Juice

Method
 

  1. Sauté butternut squash, carrots, ginger root, and garlic in olive oil for 10 minutes.
  2. Add bone broth, apple cider vinegar, honey and lemon juice and put on low heat for 10-15 minutes.
  3. Remove from heat, stir and blend. Here I used a handheld immersion blender.
  4. Pour into a glass to serve warm or chill to enjoy cold.

Makes 4 half cup servings.
