Maple Bliss Salad

This Maple Bliss Salad is a perfect balance of sweet and savory, featuring fresh spinach, hearty farro, crisp apples, crunchy walnuts, and chewy dates, all tossed in a fragrant maple vinaigrette. The addition of thyme and marjoram adds an herby depth, enhancing the natural sweetness of the apples and dates while complementing the nuttiness of the farro and walnuts.

Packed with fiber from the farro, spinach, and apples, plus healthy fats from walnuts, this salad is as nutritious as it is flavorful. A touch of maple syrup in the dressing ties it all together, making this a sweet yet low-sugar and balanced option for a healthy meal or maple bliss salad side dish!

Maple Bliss Salad

Ingredients Method Notes

Ingredients
  

  • 1 cup Farro, cooked
  • 5 oz Baby spinach
  • 1 oz Arugula
  • ½ cup Microgreens
  • 1 tablespoon Fresh thyme
  • 1 Apple (medium) Sugarbee, thinly sliced and halved
  • 3 Medjool dates, pitted and chopped
  • ½ cup Walnuts, chopped
  • ¾ cup Pecorino cheese, shaved
  • 6 tablespoon Maple balsamic dressing
  • 1 tablespoon Fresh marjoram

Method
 

  1. In a large bowl, add farro, spinach, arugula, microgreens and thyme. Toss together.
  2. Add in apple slices, dates, walnuts, cheese and lightly toss with greens and farro mixture.
  3. Add maple balsamic dressing, top with marjoram and serve.

Notes

An apple cider vinegar dressing would be another great option as an alternative.
