Spring Garden Farro Salad

This spring-inspired farro salad brings fresh, seasonal produce including radishes, asparagus, watercress and green leaf lettuce. Ingredients
  

  • 1.5 cups green lettuce leaves
  • 0.5 cups asparagus, blanched, cut into pieces
  • 1/2 cup radishes, sliced, cut in half
  • 1/2 cup cooked farro
  • 2-3 tbsp goat cheese, crumbles
  • 1/4 cup watercress

Method
 

  1. Toss green leaf lettuce with asparagus, radishes, and cooked farro.
  2. Top with goat cheese and watercress.
  3. Add a honey lemon vinaigrette or your favorite salad dressing.
