Ingredients
  

  • 4 graham crackers crushed
  • 1/2 tbsp unsalted butter
  • 1/2 packet low fat cream cheese, softened
  • 1/2 cup Greek yogurt, plain non-fat
  • 4 tbsp 100% pumpkin puree
  • 1/4 cup maple syrup
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract

Method
 

  1. Crush graham crackers in Ziplock bag. Add butter and continue mixing in the bag until evenly distributed
  2. Add all remaining ingredients into a medium both and blend with hand mixer until smooth
  3. Place bowl in refrigerator to chill for 30-60 minutes
  4. Pack graham cracker crumble at the bottom of each ramekin
  5. Scoop in pumpkin mixture on top of graham crackers
  6. Decorate with some extra pieces of graham crackers and sprinkle on pumpkin pie spice or cinnamon
